Millbrook Estate – The Underground Cellar
Millbrook Estate’s underground wine cellar was built in an old quarry. Ambient temperature inside the cellar is maintained by the thermal mass of rock and soil surrounding the reinforced concrete construction. Temperature variation is minimal and no energy input is required.
Base wine for our sparkling wine is made at the winery and transferred to the underground cellar where secondary fermentation in a bottle takes place. Only the best hand picked grapes are used from good vintages for Millbrook Estate Methode Champenoise Sparkling Wine.
After up to eight years bottle maturation in wine cellar, wines are transferred to riddling racks in readiness to disgorge accumulated yeast lees using the neck freezer. Wine is flavour adjusted (dosage), corked, wired and hooded on site in small batches.
Visitors are welcome. Small groups can enjoy a private tasting in our tasting room by arrangement.
